The Mauna Kea Resort on the Big Island of Hawaii is hosting its 10th annual Winter Wine Escape, Nov. 14--16, providing an opportunity to enjoy great wines and superb cuisine in a romantic setting.

Here are details:

Thursday, November 14
Prelude - “A Decade of Memories”
Hapuna Beach Prince Hotel/Courtyard/Breezeway
6:30pm-9:30pm / $88.00 per person
The 10th Annual Winter Wine Escape kicks off its renowned, three-day food and wine extravaganza by revisiting a decade's worth of indelible memories. Travel through time as more than 50 world-class vintners and wineries offer their latest bottling and reprise the best they have shared over the past 10 years. In addition, Chef Corey and his 17 guest celebrity chefs showcase their culinary dexterity with signature dishes from restaurants around the country. This sensational evening will also boast entertainment by the legendary Nadia Deleye from Kauai, and will conclude with a Hapuna Beach tradition: savoring aged port, dessert wines, and cigars while taking in a comparable "feast" for the eyes---the star-studded skies of the Kohala Coast.

Friday, November 15
“Back to the Earth” -(seminar)
The impact of organic farming in wine quality

Join a refreshingly honest discussion with California's leading wineries in organic farming techniques and learn how their time-tested methods are affecting the "terroir" (soils that give nourishment to the vines) and with them the wines being produced today. But don't take the farmers' word for it: Judge for yourself in a tasting that showcases the wines produced by these methods. Kawamata Farm's dazzling tomato fields promise a singularly spectacular backdrop for a three course "Tasting Lunch" with a buffet lunch to follow. Chef Corey and the Prince Chefs work their magic and showcase these prize-winning tomatoes that the great chef's of Hawaii love to use. They will be perfectly paired with suitably special wines. In just its second year, this event celebrates the island tradition of free and open discussion. Highlights include:
Grgich Hills Cellar—Violet Grgich will share a vertical of her father's celebrated Chardonnay, a highly rated wine and one of the few California Chardonnays that age as elegantly as white Burgundy. Taste for yourself why Grgich's Chardonnay won the Paris Competition in 1976.

Stag's Leap Wine Cellars—Jonah Beer, Director of Sales, will lead a discussion about Cabernets from Cask 23, Fay Vineyard, and Stag's Leap Vineyards to point out the how each one illustrates the impact of its terroir. Taste the wines, appreciate the differences and explore the vineyards that garner critical acclaim year after year.

Peter Michael Winery—Don't miss this rare opportunity to talk with master winemaker Luc Morlet and sip this esteemed wineries vineyard-designated, estate-grown wines. Find out why Peter Michael wines are among the most sought-after in the country.

Domaine Comte Georges de Vogue—Never before in Hawaii, Robert Stucchi Prinetti, winemaker for the prestigious Badia a Coltibuono, will fly in from Italy to conduct this impressive vertical tasting of his Riserva bottling. Experience Tuscany without the jet lag.

Ridge Vineyards—Paul Draper, winemaker and the 2000 Decanter Man of the Year, will guide a tasting of their exceptional Zinfandels and estate bottled Monte Bello Cabernet. This world-famous winery helped pioneer single-vineyard bottling 30 years ago, and its creations are as vital today as they were in those formative years.

This seminar is a rare opportunity and limited seating is available. Note: Each session will be limited to 18 guests to allow each guest to ask multiple questions.

The highlight of every year's Wine Escape, this evening brings together several masters of food and wine and asks them to collaborate on an evening fit for the caliber of the location, occasion, and guests. This year we have assembled the most star-studded group of chefs ever to grace the escape, including Randy Zweiban of Chicago's Nacional 27; Anita Lo of New York City's Annisa; Jimmy Bradley of New York City's The Red Cat and The Harrison; Tom Colicchio of New York City's Gramercy Tavern and Craft; Greg Higgins of Portland, Higgins Restaurant & Bar; Corey Waite of Hapuna Beach Prince Hotel; Thomas Woods of Mauna Kea Beach Hotel and Ross Alaimo of Mauna Kea Beach Hotel. Noted wine expert Steve Olson will host this eight-course dinner, ensuring that each dish is ideally paired with some of the world's most coveted varietals. Capping off the evening will be port and aged cigars.

Most vintners agree that of the many factors that make a great wine, the potential for greatness is decided in the vineyard. In other words: Only great grapes can make great wines. Growing the right varietals in the ideal place under optimal conditions is what defines the world's best winemaking regions. This seminar will explore why, more than ever, wines express their sense of place. Featured wineries will include Acacia Winery, Maison Louis Latour, Paul Hobbs Winery, Flowers Vineyard, Canoe Ridge Vineyard, and Chalone Vineyard.

The Culinary Journey Continues.. With A "French Connection" -(seminar)

Allow four of the United States' hottest chefs to transport you through their signature dishes inspired by classic French cuisine. Learn a few secrets of their success in our Food Lab, as they prepare and explain specialties that bridge culinary boundaries. Meet, chat, and eat with acclaimed toques Hubert Keller of Fleur de Lys, San Francisco; Dominique Tougne of Bistro 110, Chicago; Gerald Hirigoyen of Fringale's and Pastis, San Francisco; and Jean Alberti of Kokkari Estiatorio, San Francisco. Wine expert Steven Olson will serve as the event's master of ceremonies and pair wines with each culinary creation.

Steven Olson and a panel of experts discuss all the latest tips on designing a wonderful dinner party. Best of all, you can chat with a few Chefs who give their insight to home cooking and designing that special night.

The Finale

This prestigious event ends the Winter Wine Escape on a memorable note. The wineries and vintners go all out to bring you only the very best of all varietals, and award-winning celebrity chefs will showcase their signature dishes. This exhilarating evening also shows off our Island's top vendors and their products in a marketplace setting. As always, this event is a true testament to the culture and heritage of Hawaii, as evidenced by the 2002 Hoku award Group-of-the-Year Lim family, who will provide entertainment with Hawaiian dancers from the Na Lei O Kaholoku.
